Chaude Écuelle are a Chablis producer not based in the village/town of Chablis itself but based in one of the out laying hamlets Chemilly-sur-Serein. They farm sustainably Petit Chablis and Chablis appellations and they have three compact parcels of premier cru. The key factor behind the Chablis hierarchy is the soil in which the vines sit.

​While the more respected wines come from sites with Kimmeridgian soils, Petit Chablis is produced from vineyard sites planted on Portlandian soils not so rich in clay and fossils which are located mostly on plateaux above the lower slopes of Premier or Grand Cru and which results in slightly fruitier wines with a less mineral profile. Chaude Écuelle ferment their Chablis grapes in neutral containers to get the freshest of wines with a typical mineral, iodized character, which is well suited to the accompaniment of seafood or fish.
