Cyril and Frédéric Gyéjacquot farm sustainably 20 parcels in five communes over a 12 hectare domain, producing Pinot Noir, Chardonnay and Pinot Blanc grapes.
Gyéjacquot buys 5-10% of its grapes from friends therefore are on paper NM, yet essentially are pragmatists preferring the RM designation – they prefer perfecting their own production method and just get on with making great champagne. They vinify using the traditional method at all three levels of quality Non-Vintage, Vintage, and Prestige Cuvée. Being the Aube they are less well-known than the Marne for Champagne, but produce wines of admirably high quality for the price.
