The grape variety of Vouvray is Chenin Blanc. Chenin Blanc lends itself to dry wine but also fully sweet wine.
Christophe, and son Jean-Claude Pichot, farm 24 hectares of hillside vineyard split in multiple parcels, which they cultivate employing rational use of pesticides. The soil types vary from clay-limestone to flint in the Coteau de la Biche and Clos Cartaud plots respectively. The harvest is pressed pneumatically and vinified at low temperatures in tanks and oak casks (new wood is never used). They regularly make Vouvray Sec, which is the classic dry wine of the Loire, which is what you would have with seafood, shellfish, plateau of ‘fruit de mer’.
